β’ 2 cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
β’ 1 cup water
β’ 1 cup sugar (brown sugar preferred)
β’ 150g butter or margarine
β’ 1 tsp baking soda
β’ 2 cups all-purpose flour

β’ 1 tsp mixed spice (or cinnamon + nutmeg)

1οΈβ£ Boil the Fruit Mixture
In a pot, combine dried fruits, water, sugar, and butter.
Bring to a boil, then simmer for 5β10 minutes.
2οΈβ£ Add Baking Soda
Remove from heat and stir in baking soda (it will foamβthis is normal!)
Let the mixture cool for 10β15 minutes.
3οΈβ£ Mix Dry Ingredients
In a bowl, combine flour, baking powder, spice, and salt.
4οΈβ£ Add Eggs & Vanilla
When the fruit mixture is warm (not hot), beat in eggs and vanilla extract.
5οΈβ£ Combine Everything
Add dry ingredients into the fruit mixture and mix until well combined.
6οΈβ£ Bake
Pour batter into a greased baking pan.
Bake at 160β170Β°C for 45β60 minutes, or until a toothpick comes out clean.
