🧾 Ingredients
🍰 For the Cake
• 200g cream cheese (softened)
• 120g sugar
• 2 large eggs
• 120ml heavy cream
• 1 tsp vanilla extract (or vanilla bean paste for speckles)
• 120g all-purpose flour
• 1 tsp baking powder
• Pinch of salt
🍫 For the Chocolate Coating
• 200g dark chocolate
• 120ml heavy cream
• 1 tbsp butter
✨ Optional (for speckled look)
• 1 tsp finely ground tea leaves (like Earl Grey) or vanilla bean seeds
🥣 Instructions
1️⃣ Prepare the Batter
Preheat oven to 170°C (340°F).
Beat cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing well after each.
Pour in heavy cream and vanilla—mix until silky.
Sift in flour, baking powder, and salt, then fold gently.
Stir in tea leaves or vanilla seeds for that signature speckled look.
2️⃣ Bake
Pour batter into a lined loaf pan and tap gently to remove air bubbles.
Bake for 45–55 minutes until set (a slight jiggle in the center is okay).
Cool completely, then chill in the fridge for at least 2 hours.
3️⃣ Make the Chocolate Coating
Heat cream until hot (not boiling).
Pour over chopped chocolate and let sit for 2 minutes.
Stir until smooth, then add butter for a glossy finish.
4️⃣ Assemble
Place chilled cake on a rack.
Pour ganache over the cake, letting it coat evenly.
Smooth the sides if needed.
Chill again until the chocolate sets perfectly.
💡 Tip: For clean, sharp slices, use a warm knife and wipe between cuts! ✨
