• ¾ cup orange juice (or any fruit juice)
• 2 tbsp rum or brandy (optional)

• 1½ cups gluten-free all-purpose flour (with xanthan gum)
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp cloves
• Pinch of salt

• ¾ cup butter (or margarine)
• ¾ cup brown sugar
• 3 large eggs
• 1 tsp vanilla extract
• 2 tbsp molasses or honey

Mix dried fruits, juice, and alcohol (if using). Let soak for at least 1 hour—overnight gives the best flavor.

Whisk together flour, baking powder, baking soda, spices, and salt.

Beat until light and fluffy.

Mix in one at a time, beating well after each addition.

Stir in vanilla and molasses.
