Ingredients
For the Crust:
- 2 cups chocolate cookie crumbs (like crushed Oreo biscuits)
- Β½ cup melted butter
For the Filling:
- 500g cream cheese (softened)
- 1 cup granulated sugar
- 200g dark chocolate (melted and slightly cooled)
- 3 large eggs
- 1 cup heavy cream
- 2 tbsp cocoa powder
- 1 tbsp cornflour (cornstarch)
- 1 tsp vanilla extract
- Pinch of salt
For Topping (optional):
- Chocolate ganache (chocolate + cream)
- Chocolate shavings or crumbs
Instructions
- Preheat the oven to 160Β°C and line the bottom of a springform pan with parchment paper.
- Prepare the crust:
- Mix the cookie crumbs with melted butter until it resembles wet sand.
- Press the mixture firmly into the bottom of the pan.
- Bake for about 10 minutes and let it cool.
- Make the filling:
- In a large bowl, beat the cream cheese until smooth and lump-free.
- Add sugar and mix until creamy.
- Stir in melted chocolate and mix well.
- Add eggs one at a time, mixing gently (donβt overbeat to avoid cracks).
- Stir in heavy cream, cocoa powder, cornflour, vanilla, and salt until smooth.
- Assemble the cheesecake:
- Pour the filling over the cooled crust and tap the pan lightly to remove air bubbles.
- Place the pan in a larger tray filled with hot water (water bath) to prevent cracking.
- Bake for 50β60 minutes. The center should jiggle slightly when shaken.
- Cool:
- Turn off the oven and leave the cheesecake inside with the door slightly open to cool slowly.
- Chill in the fridge for at least 4 hours, or overnight for best texture.
- Top and serve:
- Before serving, drizzle with chocolate ganache and top with chocolate shavings or crumbs.
