Ingredients

For the Crust:

  • 2 cups chocolate cookie crumbs (like crushed Oreo biscuits)
  • Β½ cup melted butter

For the Filling:

  • 500g cream cheese (softened)
  • 1 cup granulated sugar
  • 200g dark chocolate (melted and slightly cooled)
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tbsp cocoa powder
  • 1 tbsp cornflour (cornstarch)
  • 1 tsp vanilla extract
  • Pinch of salt

For Topping (optional):

  • Chocolate ganache (chocolate + cream)
  • Chocolate shavings or crumbs

Instructions

  1. Preheat the oven to 160Β°C and line the bottom of a springform pan with parchment paper.
  2. Prepare the crust:
    • Mix the cookie crumbs with melted butter until it resembles wet sand.
    • Press the mixture firmly into the bottom of the pan.
    • Bake for about 10 minutes and let it cool.
  3. Make the filling:
    • In a large bowl, beat the cream cheese until smooth and lump-free.
    • Add sugar and mix until creamy.
    • Stir in melted chocolate and mix well.
    • Add eggs one at a time, mixing gently (don’t overbeat to avoid cracks).
    • Stir in heavy cream, cocoa powder, cornflour, vanilla, and salt until smooth.
  4. Assemble the cheesecake:
    • Pour the filling over the cooled crust and tap the pan lightly to remove air bubbles.
    • Place the pan in a larger tray filled with hot water (water bath) to prevent cracking.
  5. Bake for 50–60 minutes. The center should jiggle slightly when shaken.
  6. Cool:
    • Turn off the oven and leave the cheesecake inside with the door slightly open to cool slowly.
    • Chill in the fridge for at least 4 hours, or overnight for best texture.
  7. Top and serve:
    • Before serving, drizzle with chocolate ganache and top with chocolate shavings or crumbs.
