Instructions

1. Prepare the Crust

If using a crust, combine the flour and salt in a bowl.

Cut in the cold butter until the mixture resembles coarse breadcrumbs.

Add the cold water, one tablespoon at a time, until the dough comes together.

Shape into a disk, wrap, and refrigerate for 30 minutes.

2. Blind-Bake the Crust

Preheat the oven to 375°F (190°C).

Roll out the chilled dough and fit it into a 9-inch pie or tart pan.

Prick the bottom with a fork. Line with parchment paper and fill with pie weights or baking beans.

Bake for 10 minutes.

Remove the parchment and weights, then bake for another 5 minutes.
