Ingredients
For the Cake:
- 1½ cups / 190g all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup / 115g unsalted butter, softened
- ¾ cup / 150g sugar
- 2 large eggs (room temperature)
- ½ cup / 120ml fresh orange juice
- 2 tablespoons orange zest
- ¼ cup / 60ml milk
- 1 teaspoon vanilla extract
For the Optional Orange Glaze:
- ½ cup / 60g powdered sugar
- 1–2 tablespoons fresh orange juice
Instructions
1. Prepare the Cake
- Preheat oven to 175°C / 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another large bowl, cream butter and sugar together until light and fluffy.
- Beat in eggs, one at a time, then mix in orange zest and vanilla extract.
- Gradually add the dry ingredients in three parts, alternating with the orange juice and milk. Mix gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
2. Bake the Cake
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
3. Optional Orange Glaze
- Whisk together powdered sugar and fresh orange juice until smooth.
- Drizzle over the cooled loaf for a glossy, citrusy finish.
