Stuffed Mashed Potato Nests

These stuffed mashed potato nests are crispy on the outside, creamy inside, and filled with savory ground beef, vegetables, and melted mozzarella. They make a delicious dinner, appetizer, or party dish.

Ingredients

For the Potato Nests

  • 3–5 large potatoes
  • 50 g (3½ tbsp) unsalted butter
  • Fresh dill, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste
  • Dried oregano, to taste

For the Beef Filling

  • 500 g (1.1 lb) ground beef
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 large tomato, diced
  • 70 g (2½ oz) tomato paste
  • Fresh parsley, finely chopped
  • 100 g (3½ oz) shredded mozzarella

Instructions

1. Prepare the Potatoes

Peel and cut the potatoes into cubes. Boil them in salted water for 15–20 minutes, or until fork-tender.

Drain well and allow them to cool slightly.

2. Make the Mashed Potatoes

Place the potatoes in a large bowl and add the butter.

Mash until smooth, then mix in the dill, salt, black pepper, smoked paprika, and oregano.

3. Prepare the Beef Filling

Heat a large skillet over medium heat. Add the ground beef and cook until browned.

Add the onion and garlic. Cook until the onion becomes soft and translucent.

4. Add the Vegetables

Stir in the bell pepper and tomato. Cook for about 5 minutes, until the vegetables soften.

Add the tomato paste and mix well. Cook for another 1–2 minutes, then remove from the heat.

Stir in the chopped parsley.

5. Shape the Potato Nests

Preheat the oven to 375°F (190°C).

Line a baking sheet with parchment paper.

Divide the mashed potatoes into portions and shape them into round nests. Press down the centers to create a well for the filling.

6. Fill the Nests

Spoon the beef mixture into the center of each potato nest.

Top generously with shredded mozzarella.

7. Bake

Bake for about 15 minutes, or until the cheese is melted and bubbling and the potato edges are lightly golden.

For extra-crispy tops, broil for 2–3 minutes at the end. Watch closely to prevent burning.

  • Use starchy potatoes such as Russets or Yukon Golds for the best texture.
  • Drain the potatoes thoroughly before mashing.
