For the Cake
β’ 2 cups all-purpose flour
β’ 1 tsp baking powder
β’ Β½ tsp baking soda
β’ Β½ tsp salt
β’ ΒΎ cup sugar
β’ Β½ cup butter, softened
β’ 2 eggs
β’ 1 tsp vanilla extract
β’ ΒΎ cup milk or buttermilk
β’ 1 cup glacΓ© or maraschino cherries, chopped π
β’ Β½ cup yellow candied fruit or peaches/apricots, chopped
β’ Β½ cup raisins or currants, optional
β’ Β½ cup chopped pecans or walnuts, optional
For the Glaze
β’ 1 cup powdered sugar
β’ 2β3 tbsp milk or lemon juice
β’ Β½ tsp vanilla

- Preheat the Oven
Preheat oven to 350Β°F / 175Β°C and grease a loaf pan. - Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, and salt. - Cream Butter & Sugar
In another bowl, cream the softened butter and sugar until light and fluffy. - Add Eggs & Vanilla
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. - Combine Batter
Alternate adding the flour mixture and milk into the batter, mixing gently until smooth. - Prepare the Fruits
Toss cherries and chopped fruits with 1 tbsp flour to help prevent them from sinking. - Fold & Bake
Gently fold the fruits, raisins, and nuts into the batter. Pour into the prepared loaf pan. - Bake
Bake for 45β55 minutes, or until a toothpick inserted in the center comes out clean. - Cool Completely
Let the cake cool before adding the glaze. - Add the Glaze
Mix powdered sugar, milk or lemon juice, and vanilla until smooth. Drizzle over the cooled cake.
