🧾 Ingredients
For the Cake
• 2 cups all-purpose flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1½ tsp cinnamon
• ½ tsp salt
• ¾ cup vegetable oil
• 1 cup sugar
• ½ cup brown sugar
• 3 eggs
• 2 tsp vanilla extract
• 2 cups finely grated carrots
• ½ cup crushed pineapple, optional for extra moisture
• ½ cup chopped walnuts or pecans, optional
For the Cream Cheese Frosting
• 8 oz / 225 g cream cheese, softened
• ½ cup butter, softened
• 3 cups powdered sugar
• 1 tsp vanilla extract
• 1–2 tbsp milk, if needed

- Prepare the Oven
Preheat oven to 350°F / 175°C. Grease two 8-inch round cake pans and line them with parchment paper. - Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. - Mix Wet Ingredients
In another bowl, beat oil, sugar, brown sugar, eggs, and vanilla until smooth. - Combine
Gradually add the dry ingredients into the wet mixture and mix gently until combined. - Add the Carrots
Fold in grated carrots, crushed pineapple, and nuts if using. - Bake
Divide the batter evenly between the pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. - Cool & Frost
Let the cakes cool completely before adding the cream cheese frosting.
