Ingredients

For the Burger Patties

  • 500 g ground beef (80/20 fat ratio)
  • 1 tsp salt
  • Β½ tsp black pepper

For the Burger Sauce

  • Β½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp sweet pickle relish
  • Β½ tsp garlic powder

For Assembly

  • 4 hamburger buns
  • 8 slices cheddar or American cheese
  • 8 slices crispy bacon
  • 1 small onion, thinly sliced
  • 1 tomato, sliced
  • Lettuce leaves
  • Pickle slices
  • 2 tbsp butter (for toasting the buns)

Instructions

1. Make the Burger Sauce

In a small bowl, mix together the mayonnaise, ketchup, mustard, pickle relish, and garlic powder until smooth. Refrigerate until ready to use.

2. Cook the Bacon

Fry the bacon until crispy, then transfer it to paper towels to drain.

3. Prepare the Smash Patties

  1. Divide the ground beef into 8 equal portions (about 60 g each) and gently roll into loose balls. Avoid overworking the meat.
  2. Heat a cast-iron skillet or flat-top griddle over high heat until very hot.
  3. Place two beef balls on the hot surface and immediately smash them into very thin patties using a sturdy spatula or burger press.
  4. Season with the salt and black pepper.
  5. Cook for 1½–2 minutes, until the edges are deeply browned and crispy.
  6. Flip each patty, top with a slice of cheese, and cook for 30–60 seconds, or until the cheese is melted.

4. Assemble the Burgers

  1. Butter the hamburger buns and lightly toast them until golden.
  2. Spread the burger sauce on both the top and bottom buns.
  3. On the bottom bun, layer:
    • Lettuce
    • Two cheesy smash patties
    • Two slices of crispy bacon
    • Tomato slices
    • Onion slices
    • Pickle slices
  4. Top with the remaining bun and serve immediately while hot.

Tips

  • A very hot cooking surface is the key to creating the signature crispy crust on smash burgers.
  • Press the beef only once, right after it hits the hot skilletβ€”don’t press it again while cooking.
  • Serve with crispy fries, onion rings, or coleslaw for the ultimate burger meal.
