Ingredients
- 3 ripe bananas, mashed
- ⅓ cup (80 g) melted butter
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
Method
- Preheat the oven to 175°C (350°F) and grease a loaf pan.
- In a large bowl, combine the mashed bananas and melted butter.
- Mix in the sugar, eggs, and vanilla extract until well combined.
- Add the flour, baking soda, and salt. Stir just until no dry flour remains—avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove it and transfer it to a wire rack to cool completely.
Tips:
- Very ripe bananas with brown spots produce the sweetest, most flavorful bread.
- For extra texture, fold in ½ cup chopped walnuts, pecans, or chocolate chips before baking.
- Store at room temperature for up to 3 days, or freeze slices for up to 3 months.
