Ingredients:

  • Unsalted butter (softened) – 225 g (1 cup)
  • Granulated sugar – 200 g (1 cup)
  • Eggs – 4 large
  • All-purpose flour – 360 g (3 cups)
  • Baking powder – 3 teaspoons
  • Salt – ½ teaspoon
  • Milk – 240 ml (1 cup)
  • Vanilla extract – 1 tablespoon

Instructions:

  1. Cream the Butter & Sugar:
    • In a mixing bowl, cream the softened butter and granulated sugar together until the mixture is pale and fluffy.
  2. Add the Eggs:
    • Beat in the eggs, one at a time, making sure each one is fully incorporated before adding the next.
  3. Sift Dry Ingredients:
    • Sift together the all-purpose flour, baking powder, and salt.
  4. Combine Wet & Dry Ingredients:
    • Gradually add the dry ingredients to the batter alternately with the milk. Start and finish with the dry ingredients. Mix gently until smooth and well combined.
  5. Add Vanilla:
    • Stir in the vanilla extract for a lovely aroma and flavor.
  6. Prepare the Cake Pans:
    • Divide the batter evenly between two greased and lined 8-inch round cake pans.
  7. Bake:
    • Bake in a preheated oven at 170°C (340°F) for around 25–30 minutes, or until a skewer inserted into the center of the cake comes out clean.
  8. Cool:
    • Allow the cakes to cool completely before frosting.
