Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ΒΎ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1Β½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • Β½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)

For the Chocolate Frosting:

  • 1 cup unsalted butter (softened)
  • 3Β½ cups powdered sugar
  • Β½ cup unsweetened cocoa powder
  • Β½ cup melted dark chocolate
  • Β½ cup heavy cream (or milk)
  • 2 tsp vanilla extract
  • Pinch of salt

For the β€œDirty” Topping (optional but recommended):

  • Crushed chocolate cookies or cake crumbs
  • Chocolate shavings or chunks
  • Drizzle of chocolate ganache

Instructions

  1. Preheat the oven to 180Β°C (350Β°F). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Make the cake:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
    • Add the eggs, milk, oil, and vanilla extract. Mix until smooth and slightly thick.
    • Gradually pour in the hot coffee (or water) while mixing. The batter will thin outβ€”this is just perfect!
    • Divide the batter evenly between the two pans and bake for 30–35 minutes or until a toothpick comes out clean.
  3. Cool the cakes: Let the cakes cool completely in the pans before removing them.
  4. Make the frosting:
    • Beat the butter until creamy, then gradually add powdered sugar and cocoa powder.
    • Mix in the melted chocolate, cream (or milk), vanilla, and salt. Beat until the frosting is smooth and fluffy.
  5. Assemble the cake:
    • Place one layer of cake on a serving board, spread a generous amount of frosting over it, then top with the second cake layer.
    • Cover the entire cake with frosting. Don’t worry about making it neatβ€”the messier, the better! This is the “dirty” look.
  6. Top it off:
    • Add crushed chocolate cookies or cake crumbs, chocolate chunks, and drizzle with chocolate ganache to make it even more indulgent.
