  • 3½ cups (420 g) powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • A pinch of salt

Instructions

Make the Cake

  • Preheat the oven to 350°F (175°C) and prepare two 8-inch cake pans or one 9×13-inch pan.
  • In a bowl, whisk together cake flour, baking powder, baking soda, and salt.
  • In another large bowl, beat the softened butter and sugar until pale, light, and fluffy.
  • Add the egg whites and mix until smooth.
  • Add vegetable oil, lemon zest, lemon juice, and vanilla extract, then mix again.
  • Alternately add the dry ingredients and buttermilk, mixing gently until the batter becomes silky and smooth.
  • Pour the batter evenly into the prepared pan(s).
  • Bake until the top is set and a toothpick inserted in the center comes out clean, about 25–30 minutes for layer cakes or 32–38 minutes for a sheet cake.
