Instructions
Make the Cake
- Preheat the oven to 350°F (175°C) and prepare two 8-inch cake pans or one 9×13-inch pan.
- In a bowl, whisk together cake flour, baking powder, baking soda, and salt.
- In another large bowl, beat the softened butter and sugar until pale, light, and fluffy.
- Add the egg whites and mix until smooth.
- Add vegetable oil, lemon zest, lemon juice, and vanilla extract, then mix again.
- Alternately add the dry ingredients and buttermilk, mixing gently until the batter becomes silky and smooth.
- Pour the batter evenly into the prepared pan(s).
