β’ 2 cups (250g) all-purpose flour
β’ 2 tsp baking powder
β’ ΒΌ tsp salt
β’ ΒΎ cup (170g) unsalted butter, softened
β’ ΒΎ cup (150g) granulated sugar
β’ 3 large eggs
β’ 2 tsp vanilla extract
β’ Β½ cup (120ml) milk or orange juice
β’ 1Β½ cups (225g) mixed dried fruits
(raisins, cherries, mixed peel & apricot)
β’ Β½ cup (75g) tutti frutti
(optional but highly recommended)

1οΈβ£ Preheat oven to 170Β°C / 340Β°F.
Grease and line a loaf pan with parchment paper.
2οΈβ£ Sift together flour, baking powder, and salt. Set aside.
3οΈβ£ In a mixing bowl, cream butter and sugar until pale and fluffy.
4οΈβ£ Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
5οΈβ£ Add the flour mixture in batches, alternating with milk or orange juice. Mix gently until just combined.
6οΈβ£ Toss the dried fruits and tutti frutti with a tablespoon of flour, then fold into the batter evenly.
7οΈβ£ Pour batter into the prepared pan and smooth the top. Add extra fruits on top if desired for a beautiful finish β¨
8οΈβ£ Bake for 50β60 minutes or until golden brown and a skewer inserted in the center comes out clean.
9οΈβ£ Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
