β’ 2 cups / 250 g all-purpose flour
β’ 1 cup / 200 g granulated sugar
β’ 1 cup / 245 g plain yogurt
β’ Β½ cup / 120 ml vegetable oil
β’ 3 large eggs
β’ 2 tbsp lemon zest
β’ ΒΌ cup / 60 ml fresh lemon juice
β’ 2 tsp baking powder
β’ Β½ tsp salt
β’ 1 tsp vanilla extract
Optional Lemon Glaze
β’ 1 cup / 120 g icing sugar
β’ 2β3 tbsp fresh lemon juice

- Prepare the Oven
Preheat oven to 180Β°C / 350Β°F. Grease and line a loaf pan with parchment paper. - Mix Eggs & Sugar
In a large bowl, whisk the eggs and sugar together until light and slightly fluffy. - Add Wet Ingredients
Add yogurt, vegetable oil, lemon juice, lemon zest, and vanilla extract. Mix until smooth and well combined. - Add Dry Ingredients
In another bowl, combine flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until a smooth batter forms. Do not overmix. - Bake
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45β55 minutes, or until a toothpick inserted in the center comes out clean. - Cool
Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. - Add Lemon Glaze
Mix icing sugar with lemon juice until smooth. Drizzle over the cooled loaf for a bright, sweet lemon finish.
