🍰✨ Boiled Fruit Cake ✨🍰

Rich, moist, and packed with warm spices—this classic boiled fruit cake is simple to make and full of comforting flavor!

🧾 Ingredients
• 2 cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
• 1 cup water
• 1 cup sugar (brown sugar preferred)
• 150g butter or margarine
• 1 tsp baking soda
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1 tsp mixed spice (or cinnamon + nutmeg)
• ½ tsp salt
• 2 eggs
• 1 tsp vanilla extract

👩‍🍳 Instructions

1️⃣ Boil the Fruit Mixture
In a pot, combine dried fruits, water, sugar, and butter.
Bring to a boil, then simmer for 5–10 minutes.

2️⃣ Add Baking Soda
Remove from heat and stir in baking soda (it will foam—this is normal!)
Let the mixture cool for 10–15 minutes.

3️⃣ Mix Dry Ingredients
In a bowl, combine flour, baking powder, spice, and salt.

4️⃣ Add Eggs & Vanilla
When the fruit mixture is warm (not hot), beat in eggs and vanilla extract.

5️⃣ Combine Everything
Add dry ingredients into the fruit mixture and mix until well combined.

6️⃣ Bake
Pour batter into a greased baking pan.
Bake at 160–170°C for 45–60 minutes, or until a toothpick comes out clean.
