Ingredients

  • 2 cups (250g) flour
  • 1 cup (200g) sugar
  • Β½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1Β½ cups (220g) fresh strawberries (chopped)
  • Β½ cup (120ml) milk
  • 2 teaspoons baking powder
  • ΒΌ teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 tablespoons strawberry jam (optional but enhances strawberry flavor)
  • Extra flour (for coating strawberries)

Instructions

  1. Prepare the strawberries:
    • Wash, dry, and chop the strawberries into small pieces.
    • Toss the chopped strawberries lightly in a tablespoon of flour to prevent them from sinking in the batter.
  2. Make the wet mixture:
    • In a bowl, whisk together eggs, sugar, and vegetable oil until smooth.
    • Mix in the milk, vanilla extract, and strawberry jam (if using).
  3. Combine the dry ingredients:
    • In a separate bowl, sift together the flour, baking powder, and salt.
    • Gently fold the dry mixture into the wet ingredients until just combined.
  4. Add the strawberries:
    • Gently fold the floured strawberries into the batter without overmixing.
  5. Bake the bread:
    • Pour the batter into a greased loaf pan and smooth the top.
    • Bake in a preheated oven at 170Β°C (340Β°F) for 50–55 minutes, or until golden and a toothpick inserted into the center comes out clean.
  6. Cool and serve:
    • Let the bread cool in the pan for 10 minutes, then remove and allow it to cool completely before slicing.
