- 1 cup (200g) sugar
- Β½ cup (120ml) vegetable oil
- 2 large eggs
- 1Β½ cups (220g) fresh strawberries (chopped)
- Β½ cup (120ml) milk
- 2 teaspoons baking powder
- ΒΌ teaspoon salt
- 1 tablespoon vanilla extract
- 2 tablespoons strawberry jam (optional but enhances strawberry flavor)
- Extra flour (for coating strawberries)
Instructions
- Prepare the strawberries:
- Wash, dry, and chop the strawberries into small pieces.
- Toss the chopped strawberries lightly in a tablespoon of flour to prevent them from sinking in the batter.
- Make the wet mixture:
- In a bowl, whisk together eggs, sugar, and vegetable oil until smooth.
- Mix in the milk, vanilla extract, and strawberry jam (if using).
- Combine the dry ingredients:
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Add the strawberries:
- Gently fold the floured strawberries into the batter without overmixing.
- Bake the bread:
- Pour the batter into a greased loaf pan and smooth the top.
- Bake in a preheated oven at 170Β°C (340Β°F) for 50β55 minutes, or until golden and a toothpick inserted into the center comes out clean.
