🍰 White Velvet Lemon Cake

A light and fluffy cake with a refreshing burst of lemon. Perfect for any occasion, this cake is the ideal balance of sweetness and citrusy zest!


🍋 Ingredients

• 2 cups flour
• 1 cup sugar
• 1/2 cup soft butter
• 1/2 cup oil
• 4 egg whites (no yolks)
• 3/4 cup milk
• 1/4 cup lemon juice
• 1 tbsp lemon zest
• 1 tsp vanilla
• 1 tbsp baking powder
• Pinch of salt


👩‍🍳 Method

  1. Cream Butter & Sugar
    Beat butter and sugar together until light and fluffy. Then add oil and mix well.
  2. Add Egg Whites
    Gradually mix in the egg whites until smooth.
  3. Add Liquids
    Pour in the milk, lemon juice, lemon zest, and vanilla. Mix until fully combined.
  4. Add Dry Ingredients
    Gently fold in flour, baking powder, and a pinch of salt. Mix until smooth.
  5. Bake
    Pour the batter into your prepared pans and bake at 170°C / 340°F for 30–35 minutes, or until a toothpick comes out clean.
  6. Cool & Frost
    Let the cake cool completely. Frost with lemon or vanilla buttercream for an extra indulgent touch.
